I purchased an Apple Watch on Aug 23 - but what if Apple releases a newer version on Sep 7? Will I be able to trade in my 2 week old watch for a new one?
I did ask the in store rep whethet apple would release a new watch in Sep so I can hold my purchase decision.
What are my options?

It is not allowed here to speculate about unannounced products or about Apple decisions.
If and when any new products are announced or released, you can ask Apple about any options that may be available to you at that time.

By Apple's return policy, if they set a permanent price reduction within 14 days of the original purchase of a device, they will cut you a check for the difference. Since they not only reduced the price, but also improved the processor of the original watch, you could ask if they would do an exchange as well or possible widen the difference.
